Description
Brevibacterium Linens (Red Yeast) is used in the maturation of some cheeses with molds such as: Puzzone of Moena, Limburger, Brick, Munster and Raclette cheese. It spread on the characteristic orange color and develope taste and aroma during aging.

How to use: it can be added to the milk in the initial stage or in the maturation of washed rind cheeses, or fed
