Description
The liquid rennet kid is a clotting enzyme obtained exclusively by pellette selected kids. It contains only chimosine and pepsine naturally present in Goat' stomach. And the ideal rennet for slow clotting products from goat milk. The high proportion of chymosin working in its natural environment (goat's milk) allows a homogeneous coagulation of the milk in order to obtain a easy curd, and greasy cheese during ripening, also helps to enhance the 'specific flavor' of goat cheese
