Lipase calf pre-gastric Clerici is extracted only from the glands at the base of the tongue of the calves and is used as a natural method of enrichment of flavor in dairy products. Each type of lipase provides its own distinctive flavor, especially that kid gives a taste strong and well defined, spicy, very similar to Italian Provolone cheese.
Gives a delicate but discernible hint of butter, lightly spiced
Recommendations for use:
the amount of product to use depends on the percentage of fat content in the milk, the coagulation temperature, the pH of the milk and the temperature of the cheese in the presses.
